Grace’s Pumpkin Oatmeal Bars

1/2 cup Pumpkin Puree
1/4 cup Butter (1/2 stick)
1 T Molasses
1 tsp. Baking Soda
1/2 tsp. Cinnamon
dash Nutmeg
2 cups Oats
1 cup Flour
1/2 cup Brown, 1/2 cup White Sugar
Melt butter with pumpkin and molasses on the stove top or in the microwave. Add the spices and baking soda to the butter mixture.  Combine oats, flour, and sugars in a large bowl. Mix in the pumpkin mixture until well combined. Press into the bottom of a greased 9″X13″ baking dish or cookie sheet with high edges. Bake at 350 degrees F for 15 min or until nicely browned. Cut immediately, let cool, then cut again before serving. Don’t eat them all in one sitting.
Pumpkin Pancakes
1 Large Egg
1 cup Pumpkin Puree
1 cup Buttermilk
1/8 cup Vegetable Oil
1/2 cup Whole Wheat Flour
1/2 cup White Flour
1/8 cup Brown Sugar
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
Beat the egg. Add in the remaining ingredients and mix until smooth. Add additional buttermilk or flour for smoother or thicker pancakes.  Heat your griddle, and pour about 1/4 cup of the mixture for a nice size pancake! Top with bananas, pecans, warm maple syrup, or other favorite topping. Enjoy!  Makes about 15 pancakes.
 Pumpkin Facial Scrub
2 Tbsp. Pumpkin Puree
1 Tbsp. Natural Plain Yogurt
2 Tbsp. Brown sugar
Mix all together, add additional brown sugar, if needed, to make a mealy consistency. Rub on face, let sit 1 minute and rinse thoroughly. Feel invigorated!
